For┬áresidents of the Midwest, spring is a most welcome respite from the dreary cold of winter. Although our winter wasn’t particularly oppressive this year, spring retains a special place in our hearts as it is when we first start to see lovely edible organisms emerge from the earth. We’re going to celebrate this by showcasing bright, fresh whites, reds and roses that we’ll pair with small plates from Chef Mike Eng that highlight the early bounty of spring, including nettles, ramps, asparagus and wild mushrooms.
